This stuff is great!I am not a fan of sickly sweet jams. I used this and got the best batch ever. I was ready to make grape jam when I saw the huge amount of sugar the traditional recipe called for so I decided to make a change and went looking for a low-sugar alternative. I had used the popular low- or no-sugar pectin but it didn't always gel. (Yes, that could be my fault.) I found a recipe on the internet that called for this and after checking it out a little more decided to give it a try. One package made more than one batch. You can really taste the fruit and not just sugar. I am a complete convert.5So nice to not have to use so much sugarWe did a bit of canning with peach and strawberrys - worked out very well, So nice to not have to use so much sugar! We did notice a bit of difference in the consistency (vs. using Serto) but that might have been our own problem. Certainly using Pomona's Pectin along with the recipes in the book "Preserving with Pomona's Pectin" the whole process from start to finish was quick and efficient.5However it has a bunch of qualities that make it perfect for meI bought this for my first time canning anything after my garden shop said that 8 out of 10 of their staff uses this over traditional pectin. Since I am new to canning, I cant compare it to anything else. However it has a bunch of qualities that make it perfect for me. First, it has an indefinite shelf life, so the big multi-pack allows me to ease into learning this canning thing. Second, I learned how to can using the related Pomona's Pectin book which gives you very detailed instructions on every aspect of the process. Third, the book has a ton of recipes that I can use in addition to the standard Ball books recipes (but it would be harder to do the other way). Lastly, the recopies that I have made mostly with fresh blueberries have been absolutely delicious and use way less sugar than other methods.5Excellent product, I won't go back to other pectin; update: 2015, 2016 still my favorite2019 update: still my favorite! I have experimented with the amount of pectin to make syrups to conserves and jellies and jams. I love the fact that I can make products without sugar or with very little sugar. I have used pure stevia with great success. I have not used a stevia mix like those commonly availavle but I think it should work fine. It had been so long I don't even remember the old days of sugar sugar sugar and that does not bother me one bit.2016 update: I put up about 60 jars of jam qand jelly last year and all sealed and made it through the winter well. I was set to teach my nephew to make jam and had Amazon send Pomona's Pectin to him. The dog ate it (to no ill effect thankfully) so we scrambled to find some elsewhere. No luck in 5 grocery stores and one chain natural foods store. Finally, I said just get the old standby and we used that. Confirmed my earlier belief. I was shocked at the amount of sugar it took to get a gel. There is no other pectin for me but Pomona's.2015 update. After eating all of the jam I made in 2014--all with Pomona's--we are back to jamming season. The past year stood the test of time and we are happily using it again this year. Four batches in and four batches great. I substituted, per a professional jam maker's conversion, 2 TBS for each 1 3 oz liquid pectin on one recipe. It makes a nice steak :-). I will use half that amount next time round. This jelly set hard as a delicious rock. I am still amazed that I can use so little sugar and have a good product. Last year I used 1 sugar to 4 fruit and we decided it was a little less sweet than we liked. I upped the sugar : fruit ratio to 1 1/2 sugar to 4 fruit and increased the acid slightly. We are very pleased with the results.Interesting twist on pectin. This pectin uses calcium to set rather than sugar. You can use very little sugar and still get a very good jell. I won't go back to other pectins. I did have trouble with the first couple of batches and contacted the company. They were immediately responsive calling me back in just a short time after I left a message. They helped me track down my error. I was not mixing the pectin well enough with the small amount of sugar I was using so my texture was grainy. I made over 50 jars of jam in 10 batches and after the first two batches, which are certainly usable, my jams set with absolute reliability.5Stop the Insanity!Boy, this is the way to use pectin! If you're like me, and are a canner of jams and jellies, you dislike the obscene amounts of sugar required when you use regular pectins - it's just nuts. You may also object to the high price of the stuff, and the fact that you can't use less (or more!) pectin than the recipe calls for - and then your efforts may -or may not- be successful - regular pectin is touchy stuff!Well, if you are annoyed by the same pectin issues as I, this stuff is the answer. Make as little or as much jam or jelly as you wish - and never worry about whether it will work or not - this is stable stuff - use the right amount, and your results will always be the same. Really, this stuff will change the way you do canning!If you buy it in bulk, the cost will be much less than regular pectin - and it has a long shelf life too. I don't know why I waited so long to try it.Update (12/7/13): Over the years I've been using this stuff, I have noticed that if you are using Pomona's so you can reduce or eliminate the sugar in your jams and jellies, the less sugar you use, the stranger the texture of your jam/jelly is! In other words, sugar is responsible for the nice texture we have come to enjoy in a nice jam/jelly - so, the less you use, the less of that nice texture you get. Yes, you can adjust to that difference, or you can try adding back some sugar until the texture improves. Just an observation.5Great low-or-no-sweetener pectinI love this pectin. It allows me to make low sugar jams reliably without having to cook the fruit down to a paste. My jams turn out great every time with a fruity, bright taste, a pleasant texture and a lovely color. And the best part is that it tastes like FRUIT instead of tasting ridiculously oversweet.One thing to note, though, is that low-sugar jam will always have a slightly different texture than the sugary stuff, regardless of whether you use this pectin or other types of low-sugar pectin. I describe it as less of the sticky quality that sugar gives. I notice it, but people who get me jam don't seem to notice or care.I just found a canning book on Amazon that uses Pomona's for all of it's jams: Put 'em Up!: A Comprehensive Home Preserving Guide for the Creative Cook, from Drying and Freezing to Canning and Pickling. I have not read it yet, but I think it'll be worth a look.5Works great, and a good value tooI'm not a real homemaker, but I play one in my kitchen.I've helped the Mrs. can things in the past, but my involvement was pitting, coring, and dumping out really big pots of boiling water. My wife canned the way that worked for her, packets of SureJell and lots and lots of sugar. We have been progressively reducing our families sugar consumption. As summer rolled in and fresh strawberries ripened, I sallied forth and picked 75# of them. (Yes, I know. Nobody needs that much jam. I dried a bunch). I had read that Pomona's worked with low-sugar recipes so I bought some.In the middle of my first batch of strawberry jam, my wife observed the small amount of sugar I was using and told me flat out that my jam wasn't going to set. She had tried SureJell's "Low or No Sugar" with poor results. She hadn't noticed my box of Pomona's. I thanked her for her opinion, and continued on my merry way.After my first two batches set perfectly, she paid more attention and discovered my secret. Pomona's. I have since made low sugar versions of raspberry, blueberry, and blackberry jams and all have set perfectly. I could scarcely be more pleased.Next to being being able to get a good set with low sugar recipes, my favorite feature of Pomona's is that I can make HUGE batches. Instead of working in small batches, as some other unnamed pectin requires, I was able to make an enormous batch of jam with 3 boxes worth of Pomona's. Again, I was advised it would not work, but every single jar came out perfectly. Pomona's has a special place in my pantry.Once I knew to look for Pomona's, I have seen it in most grocery stores. It tends to cost more than SureJell but since the yield is higher per box, it's actually a better value. And the best value is in the 6 pack right here on Amazon.5Perfect for canning newbies! Great low-sugar pectinA little goes a long way! I wanted a low sugar pectin for my first attempt a canning jams and jellies. Pomona s was perfect, and I found myself addicted to making preserves.It works with a variety of fruit and sweetners - you can even add alcohol! It lets the taste of the fruit shine through! I had one recipe that I only used 1/2 cup of sugar for, and it was super delicious.The recipes in the box and on the website were super easy to follow and adapt based on personal preferences! It s even easy to fix any mistakes you might make with it.5BE WARNED!!! Pay close attention to the time that the pectin is exposed to heat or your fruit will not set properly.I just finished my 8th batch of jam using only stevia as the sweetener. I have done peaches, blueberries, and blackberries. My only issue is with the directions. For those of us who have canned a lot do not glaze over the directions. Pay very close attention to the amount of time the pectin is exposed to the heat. Three of my first 4 batches of peaches didn't set and I had to go to the trouble shooting section on the website. Thankfully I reprocessed the fruit with more pectin, watched the time, and they set fine the second time around. I just wish they could have found a way in the directions to have mentioned how important this was. It would have saved me a lot of time and not wasted a box of pectin. Other than that the jam tastes great and the spice suggestions in the book work well.4Great option for those who want to go sugar free!This is a great product that allows you to customize your jam/jelly/jello recipe, whether traditionally cooked or freezer. I like the fact that I don't have to buy a different pectin depending on what I make or how I make it. I can adjust the juice, sweetener, or sugar/honey however I wish.There are some downsides is that it does take some extra prep, the use of a blender depending on the recipe, and requires you to make the entire batch of calcium water (the activating agent instead of sugar) even if you don't need it (so, you have to store it in the fridge. The instructions are also a bit confusing if you choose to go sugar free because you have to flip the instructions over and back again because they don't bother copying the same steps again. It would have been a lot easier to read if they would have grouped the instructions in a different manner. The last thing is that I wish they would have packaged the item differently. It would have been great to have the products in resealable packets or recyclable plastic containers that would allow you to take what you need and store the rest easily.4
